Interestingly enough, this is the first time I have made it! I was going through my mom’s old recipe cards, and there it was. How have I missed this all these years? I have made it 3 times, with rave reviews among my family and friends.

Apples ~ any variety of apples can be used with a few exceptions. Gala, Fuji, and Red Delicious won’t hold up and will give you a watery-mushy apple – ick!

All-purpose flour ~ I have not tried this recipe with alternative flour, although a 1:1 gluten-free flour should work as a substitution.

Unsalted melted butter ~ If using salted butter, omit the salt in the recipe.

Brown & white sugar ~ brown sugar is sprinkled over the apples to create a syrupy base, and white sugar is for the cake component.

Old-fashioned oats ~ add a crunchy texture to the topping

Apple cider ~ the apples bake in the cider for a big boost of warm and tangy flavors

Eggs ~ a binder for the cake component and add richness

How To Make Apple Cobbler Crunch Cake

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set it aside.
  2. Thinly slice the apples, about 1/8 to 1/4 inch, and place in a bowl. Squeeze 1/2 of a lemon over the apples, mix gently to coat (this will keep them from turning brown), and then spread them evenly in the baking dish.
  3. Pour the apple cider over the apples, then evenly sprinkle the brown sugar over the apples.
  4. In a separate bowl, stir the flour, oats, sugar, salt, cinnamon, nutmeg egg. Stir to mix everything together, then add the egg yolk and mix until it comes together and is crumbly.
  5. Now, scatter the flour mixture over the apples. Finally, pour the melted butter over the flour mixture. Bake for 40-45 minutes, or until the top is golden brown and the apples are bubbling. You can insert a toothpick into the center to check for doneness.

  • 3 to 5 apples, sliced 1/8 to 1/4 inch thick. (Peeling is optional) any crisp variety, such as Honeycrisp or Fuji.
  • 1/3 cup apple cider
  • 5 tablespoons brown sugar
  • 1 cup white sugar
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup oats
  • 1/3 cup pecans or walnuts (optional)
  • 1 egg Plus 1 yolk
  • 1/2 cup melted butter, unsalted. Omit salt in the recipe if using salted butter.


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 11×7-inch baking dish and set it aside. * See Notes Below.
  2. Thinly slice the apples, about 1/8 to 1/4 inch, and place in a bowl. Squeeze 1/2 of a lemon over the apples, mix gently to coat (this will keep them from turning brown), and then spread them evenly in the baking dish.
  3. Pour the apple cider over the apples, then evenly sprinkle the brown sugar over the apples.
  4. In a separate bowl, mix together the flour, oats, sugar, salt, cinnamon, and nutmeg. Add egg and egg yolk and mix until it comes together. Now, scatter the flour mixture over the apples.
  5. Finally, pour the melted butter over the flour mixture.
  6. Bake for 40-45 minutes, or until the top is golden brown and the apples are bubbling. 
  7. Let cool. As it cools, the liquid will become syrupy! Serve warm with a drizzle of caramel sauce or a scoop of vanilla ice cream. It’s delicious at room temperature, too!

Notes

* If you don’t have an 11×7 inch baking dish, you can substitute a 9×9 or 8×8 inch baking dish. Alternatively, double the recipe for a larger batch and use a 9×13 baking dish.
