A creamy, sweet, and tangy dressing made with oranges, lemon and honey. Simple and healthy, this dressing will wake up salads, tacos and burgers.

Ah… the mighty avocado, and it’e endless ways to use this beautiful fruit. One of my all time favorites is this avocado citrus dressing! The perfect marriage of two fruits that are completely opposite. Sweet and acidic meets earthy and buttery…Perfection!

A quick dressing to whiz up that you can use as a dip, or topping for tacos or burgers, and is delicious with this Chicken Quinoa Bowl

While there’re many perks of making homemade dressings, this citrus avocado dressing really hits home in the health department. The avocado creates a rich creaminess without mayo, sour cream, cheese or buttermilk

Speaking of homemade dressings,I find there is a lot of mixed emotions when it comes to store-bought vs making them yourself. Wether it’s the price tag, convenience, or health benefits, I believe both can create a happy balance that addresses all factors!

I’m pretty sure after standing in front of the endless choices of dressings scouring through the ingredients, I could have made my own at home

So I gave it a try, and started making my own dressings at home, It took a little getting used to, but really doesn’t require much time or effort, and likely will have the most of the ingredients on hand.

Avocado Tips

  1. My biggest tip, plan ahead. Buy avocados before they are ripe, they will be light green and darken as they get ripe. Otherwise, it’s a huge gamble when looking for that perfectly ripe avocado… that everyone else has probably squeezed!
  2. Did you know you can freeze avocados? Yep…smash them as if you were making guacamole and vacuum seal them. Thaw at room temp, give a good stir, and use as usual.

At one time, I had three avocado trees on my property, to which our great Pyrenees “Dante” happily help himself too! I thought the same thing…avocados are poisonous to dogs! Nope. Not this guy. Not to mention our neighbors in all directions have giant trees with branches that would hang over the fence onto the street.

These green gems would be free to take unless the squirrels got to them first. We usually prevailed and brought home 10- 20 avocados every time, so we put the freezing method to the test,

How To Make Avocado Citrus Dressing

This dressing comes together quickly, and can be made in advance so make a double batch! This stuff is addicting

NOTE: This is a great time to use any avocados that may have some discoloration, it won’t affect the taste or appearance.

Toss all the ingredients into a blender, or food processor. I use my small personal blender.

Blend until smooth and creamy. Add water to thin out the dressing if you choose. I would add 1 tablespoon at a time. See note below.

Refrigerate until ready to use. Will last up to 2 weeks.

Description

A creamy, sweet, and tangy dressing made with oranges, lemon and honey. Simple and healthy, this dressing will wake up salads, tacos and burgers, and even cold pasta!


Ingredients

Scale

1/2 avocado

2/3 cup olive oil ( avocado oil works well too)

3 tablespoons orange juice

2 teaspoon lemon juice

1 tablespoon lime juice

1 tablespoon honey

2 tablespoons rice wine vinegar ( red wine vinegar or apple cider vinegar is ok too)

1 teaspoon dijon mustard

1 tablespoon brown sugar

1/4 teaspoon salt

1/4 teaspoon pepper


Instructions

Toss all the ingredients into a blender, or food processor. (I use my small personal blender.)

Blend until smooth and creamy.  Store in jar or plastic container.  That’s it!

Refrigerate until ready to use. Will last up

Notes

The size of your avocado will affect the thickness of the dressing. Add 1 tablespoon of water at a time to create a thinner consistency. Or, add a little more avocado to create a little thicker consistancy.
