Chicken Quinoa Bowl

This healthy and hearty chicken quinoa bowl is packed protein, fiber, veggies, crunchy sweet apples, and walnuts leaving you fueled and feeling good.

Eating healthily doesn’t have to be boring or bland, and this chicken quinoa bowl is a perfect example. It is over the top satisfying with all the perfect flavors and textures. It comes together in a snap, and most likely you have all the ingredients on hand, and if you’re thinking…I have never cooked quinoa, or just not sure what to do with it…or what the heck is it? Read on… I got you!

One of my favorite things to do when I’m at a loss for dinner is go to my pantry and pick a “foundation”, such as a grain, or pasta, or in this case quinoa, and then head to the fridge and see what I have…,you get where I’m going right?

So I made this bowl of deliciousness, which I always refer to as the California salad and love to pair it with my citrus-avocado dressing …AKA Citricado.  It’s sweet, tangy, and creamy, or use a dressing of your choice, but, this quinoa bowl really calls for something light, such as  lemon and olive oil, or a fruity vinaigrette would be lovely.

What Is Quinoa

It’s technically a “psuedograin” and a seed that comes from a plant. It has loads of health and nutrient benefits, and is gluten free. There are different types, colors, and is extremely versatile to use in baking and cooking. I have used it in my turkey meatloaf!    Delish.  These days, you can find quinoa pretty much everywhere. Cooking quinoa is similar to other grains, but I have had a few people tell me they are not fond of it because of the texture, which is most likely due to over cooking it or under cooking it. The best way to tell when it’s done is when you see the tiny rings that appear around the seed…can you see it?  

It should have a slight bite to it or chew, but you can cook it a little longer to soften the texture, not too much, or it will become sticky.

The chicken quinoa bowl recipe is below, but before you go, here are a few notes on some of the ingredients. 

Chicken ~ this salad is also great with shrimp, steak, or pork.

Quinoa ~ for an added boost of flavor, cook it in a broth or stock.

Change it up ~ swap out the veggies, and use what you have on hand. Try different fruits such as grapes, or pears , or use almonds and cashews.

Pro Tips

When cooking up the quinoa make extra! It freezes perfectly, up to 6 months. Let it cool completely and place in freezer baggies or containers. Thaw at room temperature and use in soups, stews, meatloaves…or overnight oats.

This healthy and hearty quinoa bowl is packed protein, fiber, veggies, crunchy sweet apples, and walnuts leaving you fueled and feeling good



2 cups uncooked quinoa ( this will make about 6 cups of cooked)

2 chicken breasts cooked and sliced ( I used 1/2 chicken breast for each bowl)

3 green onions chopped

1 cup corn ( about 2 ears of corn) canned or frozen works too

1 cup Jicama chopped

1 cup walnuts chopped

1 red bell pepper chopped


Start by grilling or baking your chicken, let it cool and refrigerate until ready to use. while your chicken is cooking prep quinoa so it can cool as well.


The amount of ingredients may be adjusted to your personal preference. For this recipe I made four salads with 1 cup of quinoa for each, and froze the other 2 cups
